Garlic Butter Shrimp & Pasta

Let's Eat!

Garlic and butter, YES PLEASE! The two greatest pleasures in life. Two INDULGENT ingredients I could probably live off of for the rest of my life. And when you combine these two in a glorious shrimp skillet, well, it’s nothing short of mouth watering happiness. So here is how you can create this at home. Enjoy. 

Here is what you will need: 
  • 8 tablespoons (1 stick) unsalted butter, divided
  • A Splash of EVOO
  • 1 1/2 pounds medium or large shrimp, peeled and deveined
  • Kosher salt and freshly ground black pepper, to taste
  • The ENTIRE bulb of garlic, minced
  • Red onion (as much as you want)
  • 2 tablespoons chopped fresh parsley
  • Old Bay Seafood Seasoning

Directions: 
  1. ​Melt 1/2 stick and a little EVOO of butter in a large skillet over medium high heat. Add garlic, onion, stir for 1 to 2 min.
  2. Add shrimp, salt and pepper and Old Bay to taste.
  3. Cook, stirring occasionally, until pink, about 2-3 minutes. 
  4. Add 1/2 stick of the melted butter. 
  5. Toss in cooked/drained pasta; stir 1 to 2 min; add parsley.
  6. Serve in on a pretty plate; garnish with cheese of your choice or not (lol). Add more Old Bay if needed. 
  7. Eat & enjoy.

Master The Solutions

I have mastered the struggle. Now it's time to master solutions that bring peace, joy, happiness, love, and inspiration. With the current state of civil unrest and my recent episode of depression; it's my responsibility to make sure I keep and maintain my righteous mind. God has entrusted me with a great work. A part of that work is to accept the things I cannot change, courage to change the things I can, and the wisdom to know the difference.

I know suffering. I know pain. I've known love. I've known joy. I constantly seek peace. Because my purpose is greater than me; taking moments to connect and ground myself are essential to my mental & physical health.

​So my dear hearts, I encourage you to find space & time to give yourself the best of you and embrace that which makes you happy and brings great joy. We all need a safe space to just be. Most often, you have to create the safe space you need for yourself. I had to remind myself of this fact and as a result, I packed a bag and retreated to a safe calm peace of heaven, the Outer Banks...God is here.  The fantasy of being rescued isn't always a reality, so darling rescue yourself & live!
